This is one of my favorite meals when I need to eat my veggies, want something yummy in a pinch, and want to quench a pasta craving!

SHEET PAN GNOCCHI WITH CHICKEN SAUSAGE

Ingredients

  • 1 Package of Mushrooms (Chopped in Half)
  • 2 Zucchinis (Chopped in 1/2" Half moons)
  • 1 12 oz Package of Mini Tomatoes
  • Any Veggies of Your choice work (eggpalnt, asparagus, yellow squash)
  • 2-3 Garlic Gloves
  • 1 12oz Package of Broccoli
  • 1/4 cup of Olive Oil
  • 1/2 teaspoon of Italian Seasoning
  • 1 teaspoon of salt
  • 1/4 teaspoon of red pepper (optional)
  • 1/4 teaspoon of black pepper
  • 1 Tablespoon of Balsamic Glaze
  • 1/4 cup of pine nuts (optional)
  • 1-2 package of Trader Joes Cauliflower Gnocci
  • 1/2 cup of Parmesan (optional)
  • Paleo Organic Basil & Cracked Black Pepper Chicken Sausage

Directions

  1. Preheat Oven to 400 degrees
  2. Chop Veggies & Peel Garlic
  3. Toss Veggies with Olive Oil, Italian Seasoning, Salt, & Pepper
  4. Drizzle with Balsamic Glaze & Pine Nuts
  5. Bake for 25 - 30 min
  6. Cook Chicken Sausage
  7. Toss Everything
  8. Finish with Parmesan & Serve

Notes

** If I want to add more flavor I'll add a dollop of pre-made/fresh pesto sauce and a sprinkle of fresh basil

*** Doubling up on portion means you'll need two sheet pans.
