This is one of my favorite meals when I need to eat my veggies, want something yummy in a pinch, and want to quench a pasta craving!

SHEET PAN GNOCCHI WITH CHICKEN SAUSAGE

Ingredients
- 1 Package of Mushrooms (Chopped in Half)
- 2 Zucchinis (Chopped in 1/2" Half moons)
- 1 12 oz Package of Mini Tomatoes
- Any Veggies of Your choice work (eggpalnt, asparagus, yellow squash)
- 2-3 Garlic Gloves
- 1 12oz Package of Broccoli
- 1/4 cup of Olive Oil
- 1/2 teaspoon of Italian Seasoning
- 1 teaspoon of salt
- 1/4 teaspoon of red pepper (optional)
- 1/4 teaspoon of black pepper
- 1 Tablespoon of Balsamic Glaze
- 1/4 cup of pine nuts (optional)
- 1-2 package of Trader Joes Cauliflower Gnocci
- 1/2 cup of Parmesan (optional)
- Paleo Organic Basil & Cracked Black Pepper Chicken Sausage
Directions
- Preheat Oven to 400 degrees
- Chop Veggies & Peel Garlic
- Toss Veggies with Olive Oil, Italian Seasoning, Salt, & Pepper
- Drizzle with Balsamic Glaze & Pine Nuts
- Bake for 25 - 30 min
- Cook Chicken Sausage
- Toss Everything
- Finish with Parmesan & Serve
Notes
** If I want to add more flavor I'll add a dollop of pre-made/fresh pesto sauce and a sprinkle of fresh basil
*** Doubling up on portion means you'll need two sheet pans.
