Breakfast is a must for me, especially a meal with eggs. There isn’t any other food that gets my day going. I’m not a coffee drinker, because I wake up with lots of energy, but eggs are the perfect boost for me. I like to mix my egg dishes up. I make a mean scramble, but lately, I’ve been interested in making different egg dishes. I came across a yummy dish with Cauliflower by Jessica Sepel. She’s a health blogger, nutritionist, and well-ness coach – all around awesome. Cauliflower is a fairly bland vegetable, but rather than taste, it should be remembered for its health benefits: an anti-oxidant, an anti-inflammatory, and amazing vegetable for your cardiovascular and digestive system.  The dish is fresh and super simple to make.  Sautée the cauliflower florets in a pan with olive oil, salt and pepper, paprika and cajun seasoning.  My Mom has some amazing seasonings at home, so I added Rogan Josh Seasoning, instead of cajun seasoning, but still added the paprika. After the cauliflower cooked and softened I decided to top the cooked cauliflower with a sunny side up egg. I think the seasoned cauliflower would be amazing in a scramble, but any egg style goes. Whether you like your eggs separate or mixed with your veggies, this dish was delicious!
